New Dawn Rum
Agricole Rum from La Palma, Canaries – £95.00 (inc. VAT)

Captain Andreas sourced this rum for us from the respected Aldea Distillery, which only uses fresh sugar cane juice from their own organic plantations on the island. The juice was processed in a copper alembic still over a wood oven.
On the arrival of the handsome Fairtransport brigantine, Tres Hombres, the rum was decanted into French white oak barrels to age for 5 months on the rolling sea. After spending 6 months in Amsterdam the two barrels finally arrived at the East London Liquor Company to rest a further year before bottling at cask strength.
The ceramic flagons were hand-made within East-London at the Clay Collective studio in Hackney. Artists Sophie Alda and Anna Jones designed these beautiful moulds and cast in total 820 flagons. The artwork for the project was commissioned from another East-London resident, Adam Latham, who works with pencil and watercolour.
Nose: forest honey, brandied cherries, blanched almonds, sultanas, clove, allspice, fresh cut hay.
Tasting of salted dark caramel, golden raisins, overripe pineapple, blanched almonds, finishing with notes of sandalwood incense and sweet grass.
