New Dawn Rum
Aged Dominican Republic Rum – £130 (inc. VAT)

Matured in American oak barrels, this 18 year old solera rum started its journey in the hills of Santo Domingo, the Dominican Republic, where it was specially crafted for us by master blenders at Oliver and Oliver. Once selected, the liquid was decanted into European oak port wine barrels ready to continue its journey across the Atlantic aboard the handsome Fairtransport brigantine, Tres Hombres, aged a further 45 days on the rolling sea. After arriving at the East London Liquor Company, the barrels rested for a further year before bottling at cask strength.
The ceramic flagons were hand-made within East-London at the Clay Collective studio in Hackney. Artists Sophie Alda and Anna Jones designed these beautiful moulds and cast in total 820 flagons. The artwork for the project was commissioned from another East-London resident, Adam Latham, who works with pencil and watercolour.
Nose: freshly-baked gingerbread, deep tannic red wine, light smoke, dry straw, black peppercorns, golden raisin, sesame.
Tasting of rich molasses, slight salinity, dry ginger, cola nut, finishing with notes of honeycomb.
